Sweet Salad with Avocado Dressing

I can't really call this one a recipe.  It's a meal idea that anyone can make quickly.

The salad ingredients are grated carrot and beet and chopped figs, but for the autoimmune version, I used cubed pears instead of figs.  Whether figs are compliant with the AIP or not seems to be slightly disputed. They do contain seeds after all, as do berries.

The dressing is this avocado sauce (click to go to the recipe).

I really enjoy the chewiness of this salad and the mix of flavours and textures - tangy and creamy dressing, sweet and chewy figs, crunchy veges.  You can also add some leafy greens and herbs

This salad would be fine for anyone on the Paleo Diet or SCD. Because of the Avocado, beets and figs it's not suitable for any FODMAPs diet. It's also vegan.

That's right! Food prep. At the moment, food prep takes up one whole day a week, usually Saturday. However, tomorrow I'm going on an all-day boat trip and need to take my own food. There are munchies available but confident it won't be suitable for this special autoimmune dieting snowflake.

There will also be champers.  But not for me.  There's nothing I love better than watching other people indulge.  For platelets, I can do it.
