It's such gorgeous weather today. All summery and full of happy. The cats are
actually chasing butterflies. It's a perfectly clichéd summer day.
Of course, I'm stuck inside with my books and research papers, but never mind.
I do it to myself, after all.
This week, I've relied heavily on the old standby of 'chicken salad' for quick lunches. It's not really exciting, but is nutritious and takes five seconds to throw together, once the chicken is roasted.
By Saturday, however, I may be heartily sick of chicken and maca bars and ready to spend all evening in the kitch. What a luxury to actually linger over cooking something exotic,
delicious and complicated! Any ideas?
