Power Pruffins

Right now I am going deep with the Thryoid and gaining a lot of respect for the power of that little gland. You know, it's a sensitive little thing, sitting there under the control of the Hypothalamus and Pituitary, constantly tweaking your metabolism to account for external and internal conditions like a cold day or reduced calorie intake.

I just know I'm going to have my usual problem of having to trim my 5000 word masterwork down to the required 1500 and have been going into cold sweats at the thought of getting the assignment finished in just one more week. I have to keep reminding myself of a few basic facts - it's only 15% of the final mark, it doesn't actually need to be the best piece of genius that my tutor ever read and it's good to remember that in previous years I'd frequently crank out a full 1500 words in the few hours before deadline and usually it all came out ok.

I took a break today to whip up a batch of Pruffins - that's Protein Muffins. These ones are slightly higher carb and work well as a porta-breakfast when I make it to the gym in the mornings. Otherwise they do as a post-workout snack or any other time that I'm feeling muffiny.

Makes 6

1 cup Oatbran
¼ cup Applesauce
¼ cup finely grated apple
¼ cup finely grated sweet potato
100g Ricotta cheese

1 Egg
2 Egg whites

½ tsp Apple Cider Vinegar
Tsp Guar gum
2 tsp Cinnamon
½ tsp Ginger
½ tsp Nutmeg

Put the Oatbran, grated apple, grated sweet potato, Applesauce, Ricotta cheese, Guar gum, vinegar and spices into a bowl and mix until all the ingredients are evenly combined. It takes some tricep power to get that happening!

Lastly add the egg and egg whites and mix again.

Spoon into a lightly oiled muffin tray and bake for 25 minutes or until they look right. I like to use the bendy Silicone ones because they just never stick.

This mix makes only six average sized muffins so you might want to double it. They freeze well and go nicely with some low fat cream cheese spread on them, or a Protein shake on the side if you are concerned about the Pro-Carb balance.

    And I swear, my silicone muffin pans are the best things I ever bought!
